Elizabeth Eckols, 58, of Sanger passed away on April 29, 2021 in Denton. She was born in Portsmouth, VA on January 31, 1963 to Orris and Billie (Baker) Harcum, Jr.

Elizabeth was a loving and devoted mother and wife. She was a tremendous cook who took great joy in sharing her food with all of those who knew her. She was also a huge animal lover and activist, she would stop anything she was doing too help an animal in need. She had a degree in Social Science from Texas Woman's University.

She is survived by her husband, of 26 years Ed Eckols, Jr., daughter, Sara Parker Jones and husband Joe of Irving, sons; John Parker of Denton, Daniel Parker of Denton, her mother, Billie Hurcum of Irving, sister, Penny Darbey of Irving, brother, David Harcum of Louisiana, nephew Christopher Darbey and several other nieces and nephews.

She was preceded in death by her father, Orris Harcum, Jr.

A Celebration of her life will be held on Wednesday, May 5, 2021 at 2:00 PM in the Chapel of DeBerry Funeral Directors.
