Obituary

Meredith Gail Schenk died peacefully in her home on Monday, May 17, 2021.  She fought leukemia courageously until finally she returned to God.

Meredith was born on September 3, 1943, in the city of Seguin in the great state of Texas, to James and Elizabeth Shanklin.  She grew up in the Pacific Northwest between Oregon and Washington.

Meredith married George A. Schenk on December 27, 1963.  They had two wonderful children together, Christopher Lynn and Stephanie Gail.  Although they raised their children in Portland, Oregon, Meredith's adventurous spirit instilled in them passions for a wide variety of travel and experiences that included skiing, camping, river rafting, sailing, and spontaneous road trips. After their children had grown, Meredith and George   went on to live in Grants Pass, OR, Tacoma, WA, LaGrande, OR, Kelso, WA, Puyallup, WA and finally Denton, TX.  She always wanted to return to Texas.

Meredith completed her Associates Degree in Nursing while in Grants Pass, OR and completed her Nursing degree in LaGrande, Oregon. She specialized in pediatrics at Mary Bridge Children's Hospital in Tacoma, WA.  All the while George continued his career as a pharmacist.

She embraced her interests with vigor and enthusiasm whether it be quilting, playing the harp or singing in the church choir.  She was grounded by her faith in the Catholic church in her daily life.

She is survived by her husband, George; her son, Christopher (Donna); her daughter, Stephanie (Eric).  She had 6 grandchildren, Traci (Aaron), Anthony, Christopher Colin, Alyxandra (Justin), Samuel and Nicholas.  She had 9½ great-grandchildren, Kai, Keeli, Ayden, Aria, Taren, Emmalyn, Naiya, Dezic, Jackson and Alyx's unborn child (due on Meredith's birthday).

Meredith has made her way to Heaven, where God received a bright angel that day.  Her sparkling eyes, big smile, infectious laugh, and passion will be remembered by all who loved her.  She will be immensely missed by her family and friends.

Services will be held at St. John Paul II University Parish, Denton, TX on Saturday, May 29, 2021.  Mass begins at 11:00 am.  It can be live streamed at https://youtu.be/v74VzbBJk0Y

Refreshments will be served in the Parish Hall after the ceremony.

A private family gathering for a celebration of life will be held in the Pacific Northwest at a later date.
